Preparation of Steak Tartare

Chop the Beef
Finely chop the beef tenderloin into small pieces using a sharp knife. Make sure to remove any sinew.

Mix the Ingredients
In a mixing bowl, combine the chopped beef with salt, black pepper, capers, Dijon mustard, Worcestershire sauce, shallots, and parsley. Mix well until all ingredients are evenly incorporated.

Add the Egg Yolk
Create a small well in the center of the mixture and carefully place the egg yolk on top. Do not mix yet.
Preparation of Crostini

Slice the Baguette
Slice the baguette into 1/2 inch thick slices.

Toast the Slices
Brush each slice with olive oil and place them on a baking sheet. Toast in a preheated oven at 400°F (200°C) for about 5-7 minutes or until golden brown.
