Make the Pasta Dough
In a large bowl, mix the flour and salt. Create a well in the center and add the eggs. Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Roll Out the Pasta
After resting, divide the dough into four pieces. Roll each piece out into thin sheets using a pasta machine or a rolling pin. Cut the sheets into tagliatelle strips.

Cook the Pasta
Bring a large pot of salted water to a boil. Cook the tagliatelle for 3-4 minutes until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Prepare the Sauce
In a large skillet, heat olive oil over medium heat. Add the spring peas and sauté for about 2 minutes. Add the lobster meat and cook until heated through, about 3 minutes. Stir in the fresh basil.

Combine Pasta and Sauce
Add the cooked tagliatelle to the skillet with lobster and peas. Toss gently to combine, adding reserved pasta water as needed to create a sauce. Season with black pepper.

Serve
Plate the lobster tagliatelle and sprinkle with grated Parmesan cheese. Garnish with extra basil if desired.
