Chateaubriand

Method

Cooking Instructions

  1. 1

    Prepare the Tenderloin

Remove the beef tenderloin from the refrigerator and let it sit at room temperature for about 30 minutes. Preheat your oven to 400°F (200°C).

  2. 2

    Season the Meat

Pat the tenderloin dry with paper towels. Rub the surface with olive oil, then season generously with kosher salt and black pepper.

  3. 3

    Sear the Tenderloin

In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the tenderloin and sear on all sides until browned (about 3-4 minutes per side).

  4. 4

    Add Aromatics

Add butter, garlic, rosemary, and thyme to the skillet. Once the butter melts, spoon it over the tenderloin for flavor.

  5. 5

    Roast in Oven

Transfer the skillet to the preheated oven and roast for 15-20 minutes or until the internal temperature reaches 130°F (54°C) for medium-rare.

  6. 6

    Rest and Serve

Remove the skillet from the oven, cover the tenderloin with foil, and let it rest for 10 minutes before slicing. Serve with your choice of sides and sauces.
