Prepare the Ribeye

Remove the ribeye from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This allows for even cooking.

Season the Steak

Generously season both sides of the ribeye with kosher salt, freshly ground black pepper, and garlic powder.

Heat the Pan

In a cast-iron skillet or heavy-bottomed pan, heat the olive oil over medium-high heat until shimmering.

Sear the Ribeye

Add the ribeye to the hot pan and sear for about 4-5 minutes on one side until a golden crust forms. Flip the steak and cook for another 3-4 minutes for medium-rare, adjusting the time for desired doneness.

Add Butter and Rosemary

In the last minute of cooking, add butter and a sprig of fresh rosemary to the pan. Baste the ribeye with the melted butter for extra flavor.

Rest the Steak

Remove the ribeye from the pan and let it rest on a cutting board for 5 minutes before slicing.

Slice against the grain and serve immediately, optionally garnished with more fresh rosemary.
