    Prepare the Chorizo Smash Patty

    In a skillet over medium heat, cook the chorizo until browned and crispy. Remove from skillet and set aside.

    Make the Beef Smash Patties

    Divide the ground beef into two equal portions and form into balls. Heat a cast-iron skillet or griddle over high heat. Place the beef balls on the skillet and smash them down with a spatula until they are about 1/2 inch thick. Season with salt and black pepper.

    Cook the Patties

    Cook the smash patties for about 2-3 minutes on one side, until a crust forms. Flip the patties, add a slice of American cheese on each, and cook for an additional 1-2 minutes until the cheese is melted.

    Cook the Bacon

    In the same skillet, add the Applewood bacon and cook until crispy. Remove and set aside.

    Assemble the Burger

    On the bottom half of the burger buns, place one beef smash patty, followed by the chorizo smash patty, then the second beef smash patty. Top with crispy bacon, sliced jalapeños, and pour queso fundido cheese sauce over the top. Add the top half of the bun.

    Serve immediately with your choice of sides.
