    Marinate the Meat

    In a large bowl, combine olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper. Add filet tips and coat well. Cover with plastic wrap and marinate in the refrigerator for at least 2 hours, preferably overnight.

    While the meat is marinating, prepare the house roasted salsa. You can use your favorite salsa recipe or roast tomatoes, onions, and jalapeños until charred, then blend until smooth.

    Preheat a grill or skillet over medium-high heat. Remove the filet tips from the marinade and grill for about 3-4 minutes on each side for medium-rare, or until cooked to your desired doneness.

    Let the meat rest for a few minutes, then slice it against the grain. Serve with house roasted salsa, crumbled cojiita cheese, chopped onion, cilantro, and pickled onions on the side. Squeeze fresh lime juice over the top before serving.
