    In a large bowl, combine the buttermilk and cajun seasoning. Add the chicken thighs, ensuring they are fully submerged. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.

    In a small bowl, mix together the mayonnaise, yellow mustard, and honey until well combined. Set aside.

    Prepare the Slaw

    In a separate bowl, mix your choice of shredded cabbage and carrots with a pinch of salt and pepper. Optionally, you can add a small amount of vinegar for tanginess. Set aside.

    Dredge the Chicken

    After marinating, remove the chicken from the buttermilk and let excess drip off. In a shallow dish, combine the flour, salt, and black pepper. Dredge each piece of chicken in the flour mixture, pressing lightly to ensure a good coating.

    In a large skillet, heat the vegetable oil over medium-high heat until shimmering. Carefully add the coated chicken thighs and fry for 5-7 minutes on each side, or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).
