Grilled Jamaican Jerk Chicken

Method

Preparation and Cooking

  1. 1

    Marinate the Chicken

In a bowl, combine the Jamaican jerk seasoning, olive oil, lime juice, salt, and pepper. Add the chicken thighs, ensuring they are well coated. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.

  2. 2

    Prepare Pickled Onions

In a small bowl, combine the thinly sliced red onion, water, and apple cider vinegar. Let it sit for at least 30 minutes to pickle.

  3. 3

    Make Roasted Garlic Aioli

In a bowl, mix the mayonnaise with the roasted garlic until well combined. Season with salt and pepper to taste. Set aside.

  4. 4

    Prepare the Slaw

In a large bowl, combine the shredded cabbage and carrots. Toss with a bit of salt and pepper, adjusting to your taste.

  5. 5

    Grill the Chicken

Preheat the grill to medium-high heat. Grill the marinated chicken thighs for 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C).

  6. 6

    Serve

Serve the grilled jerk chicken with house slaw, pickled onions, and a generous dollop of roasted garlic aioli on the side.
