    Roast the Beef

    Preheat your oven to 350°F (175°C). Season the prime roast beef with salt and black pepper. Place it in a roasting pan and roast for about 1.5 to 2 hours, or until it reaches your desired doneness. Let it rest for 15 minutes before slicing.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove them from the skillet and let them drain on paper towels.

    Caramelize the Onions

    In the same skillet with the bacon drippings, add sliced onions. Cook over medium-low heat, stirring occasionally, until they are soft and caramelized, about 15-20 minutes.

    Make Roasted Garlic Aioli

    Preheat the oven to 400°F (200°C). Cut the tops off the garlic heads, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft. Squeeze the roasted garlic into a bowl, add mayonnaise, salt, and pepper. Mix until smooth.

    Slice the roast beef and layer it on a plate. Top with caramelized onions, bleu cheese crumbles, and crispy bacon. Add a handful of mixed greens, drizzle with balsamic glaze, and serve with roasted garlic aioli on the side.
