Prepare the Wonton Chips
Preheat the vegetable oil in a deep fryer or large pot over medium heat. Cut wonton wrappers into triangles and fry them in batches until golden and crispy. Remove and drain on paper towels, then sprinkle with salt to taste.

Prepare the Ahi Tuna
Dice the ahi tuna into small cubes. In a bowl, drizzle with sweet soy glaze and toss gently to coat. Set aside.

Prepare the Toppings
Slice the jalapenos, avocado, and scallions. Cut the nori sheet into small strips.

Assemble the Nachos
On a large serving platter, layer the fried wonton chips. Top with diced ahi tuna, jalapenos, avocado slices, and scallions. Drizzle with sriracha mayo and additional sweet soy glaze. Sprinkle nori strips and sesame seeds on top.
