Method

Preparation

  1. 1

    Season the Steak

Take the 12 oz ribeye steak and season both sides generously with salt and black pepper. Let it sit at room temperature for about 30 minutes to allow the seasoning to penetrate the meat.

  2. 2

    Prepare the Cooking Surface

Heat a cast-iron skillet or grill over high heat until it's very hot. Add 1 tablespoon of olive oil and allow it to heat until shimmering.

Cooking

  1. 3

    Sear the Steak

Place the ribeye steak in the skillet or on the grill. Sear it for about 4-5 minutes on the first side without moving it, until a golden-brown crust forms.

  2. 4

    Flip and Add Aromatics

Flip the steak using tongs. Add the minced garlic, butter, and fresh rosemary to the pan. Cook for an additional 4-5 minutes for medium-rare or to your desired doneness.

  3. 5

    Baste the Steak

Tilt the skillet slightly and use a spoon to baste the steak with the melted butter and garlic for enhanced flavor.

Resting and Serving

  1. 6

    Rest the Steak

Once the steak reaches your desired doneness, remove it from the skillet and let it rest on a cutting board for about 5-10 minutes. This allows the juices to redistribute.

  2. 7

    Slice and Serve

Slice the steak against the grain and serve immediately, garnished with additional fresh rosemary if desired.
