Preparation

    Roast the Garlic

    Preheat your oven to 400°F (200°C). Cut the top off the whole garlic bulb to expose the cloves. Drizzle with olive oil and wrap the bulb in aluminum foil. Roast in the oven for about 30-35 minutes, or until the cloves are soft and caramelized.

    Prepare the Potatoes

    While the garlic is roasting, peel and chop the russet potatoes into even chunks. Place them in a large pot and cover with cold water. Add 1 tsp of salt to the water.

Cooking

    Boil the Potatoes

    Bring the pot of potatoes to a boil over high heat. Once boiling, reduce the heat to medium and let simmer for about 15-20 minutes, or until the potatoes are tender and easily pierced with a fork.

    Drain and Mash

    Once cooked, drain the potatoes in a colander. Return them to the pot. Squeeze the roasted garlic cloves out of their skins and into the pot with the potatoes.

Finishing Touches

    Cream and Butter

    Add the heavy cream and unsalted butter to the potatoes and garlic. Use a potato masher or fork to mash everything together until creamy and smooth.

    Season

    Season the mashed potatoes with black pepper and adjust salt to taste. If desired, stir in fresh chives for added flavor.

Serving

    Serve

    Transfer the garlic mashed potatoes to a serving dish and enjoy while warm. Garnish with extra chives if desired.
