Spicy Aioli
Method
Preparing the Calamari

Clean the Calamari
Rinse the calamari under cold water. Remove the head and innards, and slice the body into rings about 1/2 inch thick.

Prepare the Breading
In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder.

Coat the Calamari
Dip the calamari rings first into the egg mixture, then dredge them in the flour mixture until evenly coated.
Frying the Calamari

Heat the Oil
In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches. Fry for about 2-3 minutes per side or until golden brown and crispy.

Drain
Remove the fried calamari with a slotted spoon and drain on paper towels to remove excess oil.
Making the Spicy Aioli

Combine Ingredients
In a small bowl, combine the mayonnaise, minced garlic, Sriracha sauce, lemon juice, and salt.

Whisk the ingredients together until smooth and well combined.
Serving

Serve the Dish
Place the crispy calamari on a serving platter and serve hot with the spicy aioli on the side for dipping.
