Prepare the Rice

Cook the Rice
In a medium saucepan, combine 1 cup of long grain rice with 2 cups of water. Bring to a boil over high heat.

Simmer the Rice
Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15-20 minutes, or until the rice is tender and the water is absorbed.

Fluff the Rice
Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.

Mix the Sauce Ingredients
In a small bowl, combine 3 tablespoons of soy sauce, 1 tablespoon of sesame oil, 3 minced garlic cloves, 1 teaspoon of grated ginger, 1 teaspoon of cornstarch, and 2 tablespoons of water. Stir until well mixed and cornstarch is dissolved.
Stir Fry the Vegetables

Heat the Pan
In a large skillet or wok, heat a tablespoon of oil over medium-high heat.

Add the Vegetables
Add the chopped vegetables to the pan and stir-fry for about 5-7 minutes, or until they are tender-crisp.

Add the Sauce
Pour the prepared sauce over the vegetables and stir well to combine. Cook for an additional 2-3 minutes until the sauce thickens slightly.
Serve

Serve the vegetable stir fry over a bed of fluffy rice. Enjoy your meal!
