Prepare the Stuffing

    Sauté the Spinach

    In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add 2 cups of fresh spinach and minced garlic. Sauté until the spinach is wilted, about 2-3 minutes.

    Mix the Ingredients

    In a mixing bowl, combine the sautéed spinach and garlic with 8 oz of cream cheese, 1 cup of grated Parmesan cheese, 2 tablespoons of lemon juice, 0.5 tsp salt, and 0.25 tsp black pepper. Mix until well combined and creamy.

Prepare the Salmon

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Season the Salmon

    Pat the salmon fillets dry with paper towels. Rub 1 tablespoon of olive oil over the fillets and season with 0.5 tsp of salt and 0.25 tsp of black pepper.

    Stuff the Fillets

    Using a sharp knife, carefully cut a pocket in each salmon fillet. Stuff each pocket with the prepared stuffing mixture, pressing gently to secure.
