    Preheat your oven to 375°F (190°C).

    Prepare the Spinach Filling

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add spinach and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.

    Mix the Filling

    In a mixing bowl, combine the cooked spinach, feta cheese, cream cheese, salt, and black pepper. If using, add chopped fresh herbs. Mix until well combined.

    Prepare the Chicken

    Using a sharp knife, carefully create a pocket in each chicken breast by slicing it horizontally. Be careful not to cut all the way through.

    Stuff the Chicken

    Spoon the spinach and cheese mixture into each chicken pocket, filling it generously. You may use toothpicks to secure the openings if necessary.

    Sear the Chicken

    In the same skillet, heat the remaining tablespoon of olive oil over medium-high heat. Sear each stuffed chicken breast for 3-4 minutes on each side until golden brown.

    Transfer the seared chicken breasts to a baking dish. If desired, sprinkle with Parmesan cheese. Bake in the preheated oven for 25-30 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
