Wash and Trim Asparagus
Rinse the asparagus under cold water to remove any dirt. Trim the woody ends of the asparagus by snapping them off or cutting them about 1-2 inches from the bottom.

In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Gradually add water to the dry ingredients while whisking until you achieve a smooth batter.

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small amount of the batter into the oil; it should sizzle and bubble.

Dip each asparagus spear into the batter, making sure it is fully coated. Allow any excess batter to drip off before frying.
