    Prepare the Zucchini Noodles

    Using a spiralizer or a vegetable peeler, create zucchini noodles and set aside.

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add diced onion and minced garlic, sauté until fragrant.

    Add Remaining Vegetables

    Stir in broccoli florets and red bell pepper slices. Cook for about 5 minutes until slightly tender.

    Incorporate Spinach and Artichokes

    Add spinach and artichoke hearts to the skillet, cooking until spinach is wilted.

    Toss in Zucchini Noodles

    Add the zucchini noodles and Kalamata olives to the skillet. Toss everything together and cook for an additional 3-4 minutes.

    Season and Serve

    Season with salt and pepper to taste. Add chopped fresh basil before serving. Optionally, serve with house-baked focaccia or a baguette.
