Preheat the Oven
Preheat your oven to 375°F (190°C).

Cook the Noodles
In a large pot of boiling salted water, cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until soft. Add chopped bell pepper and diced zucchini, cook for another 5 minutes. Stir in fresh spinach and cook until wilted. Season with Italian seasoning, salt, and pepper.

Prepare the Cheese Mixture
In a bowl, combine ricotta cheese, half of the grated Parmesan cheese, salt, and pepper. Mix well.

Assemble the Lasagna
Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish. Layer 4 lasagna noodles over the sauce. Spread half of the ricotta mixture over the noodles, followed by half of the sautéed vegetables, a third of the mozzarella cheese, and a cup of marinara sauce. Repeat the layers, then top with the remaining noodles, marinara sauce, mozzarella cheese, and the rest of the Parmesan cheese.

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

Cool and Serve
Remove from the oven and let the lasagna cool for 10 minutes before slicing. Serve warm.
