Prepare the Focaccia
Preheat the oven to 400°F (200°C). Brush both sides of the focaccia slices with olive oil and sprinkle with grated Parmesan cheese. Place on a baking sheet and bake for 10-12 minutes, or until golden and crispy.

Cook the Beef
In a large skillet over medium-high heat, add the ground beef and cook until browned and fully cooked, about 6-8 minutes. Drain excess fat if necessary.

Combine Ingredients
Add the marinara sauce and roasted red peppers to the cooked beef in the skillet. Stir well and let simmer for about 5 minutes, allowing the flavors to meld.

Assemble the Dish
Remove the focaccia from the oven. Spoon the beef and marinara mixture generously over each slice of focaccia. Top with shredded Mozzarella cheese.

Melt the Cheese
Return the assembled focaccia to the oven and bake for an additional 5-7 minutes until the cheese is melted and bubbly.

Serve
Remove from the oven, allow to cool slightly, and serve open-faced with a side of Boulder Canyon gluten-free chips (Jalapeño Cheddar or Barbecue).
