    Prepare the Crust

    In a medium bowl, combine gluten-free graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated. Press the mixture into the bottom of a 9-inch springform pan to form an even crust.

    Make the Cheesecake Filling

    In a large mixing bowl, beat the cream cheese and goat cheese together until smooth. Gradually add in the granulated sugar, mixing until combined. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

    Bake the Cheesecake

    Pour the cheesecake filling over the prepared crust in the springform pan. Bake in a preheated oven at 325°F (160°C) for 45-50 minutes, or until the center is set and the edges are lightly golden.

    Cool and Serve

    Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight before serving. Top with Luxardo cherries before slicing and serving.
