1. Prepare the Potatoes

Preheat the oven to 425°F (220°C). Wash and cube the potatoes. In a large bowl, toss the cubed potatoes with olive oil, salt, and black pepper until evenly coated.

2. Roast the Potatoes

Spread the seasoned potatoes on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until golden brown and crispy, flipping halfway through.

3. Make Jalapeño Cream Sauce

While the potatoes are roasting, blend the chopped jalapeños, sour cream, lime juice, minced garlic, and salt in a food processor until smooth. Adjust seasoning to taste.

4. Combine and Serve

Once the potatoes are roasted, remove them from the oven. Top with roasted green chiles and mozzarella cheese. Return to the oven for an additional 5-7 minutes until the cheese is melted. Serve hot, drizzled with jalapeño cream sauce and garnished with chopped chives.
