Prepare the Tartar Sauce
In a bowl, mix together mayonnaise, finely chopped dill pickles, lemon juice, salt, and black pepper. Adjust seasoning to taste. Refrigerate until ready to use.

Blacken the Fish
Coat each fish fillet with blackening seasoning on both sides. Heat oil in a skillet over medium-high heat. Once hot, add the fish fillets and cook for about 3-4 minutes on each side, or until the fish is cooked through and has a blackened crust.

Assemble the Sandwich
To assemble, spread a generous amount of tartar sauce on the bottom half of each brioche bun. Top with shredded cabbage, blackened fish fillet, sliced tomato, and wild baby arugula. Place the top half of the bun on top.

Serve immediately with additional tartar sauce on the side, if desired.
