Prepare the Quinoa
Rinse the quinoa under cold water. In a medium saucepan, combine the rinsed quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant. Add the chopped bell peppers, zucchini, carrots, and red onion. Cook for about 5-7 minutes until the vegetables are tender.

Add Spinach and Season
Stir in the fresh spinach and cook until wilted, about 2 minutes. Add the dried oregano, black pepper, and salt to taste. Mix well.

Combine with Quinoa
Add the cooked quinoa to the skillet with the sautéed vegetables. Pour in the soy sauce and stir everything together until well combined. Cook for another 2-3 minutes until heated through.

Plate and Serve
Serve the loaded vegetarian dish warm, garnished with additional black pepper or fresh herbs if desired.
