Crust Preparation

    Make the Pie Crust

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the unsalted butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

    Gradually add the ice water, one tablespoon at a time, mixing until the dough just comes together. Do not overwork the dough.

    Chill the Dough

    Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Filling Preparation

    Prepare the Fruit

    Wash, peel (if necessary), and slice the fresh fruit. Place the fruit in a large mixing bowl.

    Add granulated sugar, cornstarch, cinnamon, lemon juice, and vanilla extract to the fruit. Toss gently to combine and coat the fruit evenly.

Assembling the Pie
