Preparation of Veal

    Place each veal cutlet between two sheets of plastic wrap. Use a meat mallet to pound each cutlet to about 1/2 inch thickness.

    Sprinkle both sides of the veal cutlets with salt and black pepper.

Breading Process

    Set up a breading station with three shallow dishes: one for flour, one for beaten eggs, and one for breadcrumbs mixed with Parmesan cheese.
