Pomodoro Sauce

Method

Cooking the Pasta

  1. 1

    Boil Water

In a large pot, bring water to a boil. Add a generous amount of salt to the water.

  2. 2

    Cook Penne

Add the penne pasta to the boiling water and cook according to package instructions, usually about 10-12 minutes, or until al dente.

  3. 3

    Drain Pasta

Once cooked, drain the penne in a colander and set aside, reserving a cup of pasta water.

Making the Pomodoro Sauce

  1. 4

    Heat Olive Oil

In a large skillet over medium heat, add the olive oil and heat until shimmering.

  2. 5

    Sauté Garlic

Add the minced garlic to the skillet and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

  3. 6

    Add Tomatoes

Carefully add the canned whole tomatoes (with juices) to the skillet. Use a wooden spoon to break them up into smaller pieces.

  4. 7

    Simmer Sauce

Bring the sauce to a gentle simmer. Add the salt and black pepper. Let it cook for about 15-20 minutes, stirring occasionally.

  5. 8

    Add Basil

Stir in the chopped fresh basil and cook for an additional 2-3 minutes.

  6. 9

    Combine Pasta and Sauce

Add the drained penne pasta to the sauce, tossing to combine. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.

  7. 10

    Serve

Serve the penne pomodoro in bowls and sprinkle with grated Parmesan cheese.
