Cooking Pasta

Boil Water
In a large pot, bring 4 liters of salted water to a boil over high heat.

Cook Pasta
Add 300g of penne pasta to the boiling water and cook according to package instructions until al dente, usually about 10-12 minutes.

Drain Pasta
Once cooked, drain the pasta in a colander and reserve about 1 cup of pasta water.
Making Pesto Sauce

Prepare Ingredients
In a food processor, combine 2 cups of fresh basil leaves, 1 cup of pine nuts, 2 cloves of garlic, and 1 cup of grated Parmesan cheese.

Blend Ingredients
Pulse the ingredients until finely chopped, scraping down the sides as needed.

Add Olive Oil
With the food processor running, slowly drizzle in 1 cup of olive oil until the mixture is smooth and creamy.

Add 0.5 tsp of salt and 0.25 tsp of black pepper to taste, and blend again to combine.
Combining Pasta and Pesto

Mix Pasta and Pesto
In a large mixing bowl, combine the drained penne pasta with the prepared pesto sauce. Toss well to coat the pasta evenly.

If the pesto is too thick, add reserved pasta water a little at a time until you reach the desired consistency.
