Cook the Penne Pasta
In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. This usually takes about 10-12 minutes.

Drain and Set Aside
Once cooked, drain the pasta in a colander and set it aside, reserving a cup of the pasta water for later use.
Bolognese Sauce Preparation

Sauté Vegetables
In a large skillet or saucepan, heat the olive oil over medium heat. Add the finely chopped onion, carrot, and celery. Sauté for about 5 minutes or until the vegetables are softened.

Add Garlic
Stir in the minced garlic and cook for another minute until fragrant.

Cook the Beef
Add the ground beef to the skillet. Cook, breaking it apart with a spoon, until browned, about 6-8 minutes.

Add Tomatoes and Seasonings
Stir in the canned diced tomatoes, tomato paste, red wine, dried oregano, salt, and black pepper. Bring the mixture to a simmer.

Reduce the heat to low and let the sauce simmer for about 20-30 minutes, stirring occasionally. If the sauce becomes too thick, add a little reserved pasta water.
