Preparation
- 1
Prepare the Chicken
Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and black pepper on both sides.
- 2
Breading Process
Set up a breading station with three shallow bowls. In the first bowl, add the all-purpose flour. In the second bowl, beat the eggs. In the third bowl, add the breadcrumbs. Dip each chicken breast first in the flour, then in the beaten eggs, and finally coat with breadcrumbs.
- 3
Fry the Chicken
In a large skillet, heat the olive oil over medium heat. Once hot, add the breaded chicken breasts. Cook for about 4-5 minutes on each side or until golden brown. Remove from skillet and place on a paper towel to drain excess oil.
- 4
Assemble the Dish
In a baking dish, spread a thin layer of tomato sauce at the bottom. Place the fried chicken breasts on top of the sauce. Pour more tomato sauce over each chicken breast and top with mozzarella cheese.
- 5
Bake
Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the cheese is melted and bubbly.
- 6
Garnish and Serve
If desired, garnish with fresh basil before serving. Enjoy your Chicken Parmigiana with pasta or a side salad.
