Pasta Dough

Method

Pasta Dough Preparation

  1. 1

    Mixing Ingredients

In a large bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs and olive oil. Using a fork, gradually incorporate the flour into the eggs until a dough forms.

  2. 2

    Kneading Dough

Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until it is smooth and elastic. Wrap the dough in plastic wrap and let it rest for 30 minutes.

Cheese Filling Preparation

  1. 3

    Mixing Filling Ingredients

In a medium bowl, combine the ricotta cheese, mozzarella cheese, parmesan cheese, egg yolk, salt, and black pepper. Mix until well combined and set aside.

Pomodoro Sauce Preparation

  1. 4

    Cooking the Sauce

In a large saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Pour in the crushed tomatoes and add salt and black pepper. Simmer for 15-20 minutes until the sauce thickens. Stir in the fresh basil leaves just before serving.

Ravioli Assembly

  1. 5

    Rolling Out Dough

After the dough has rested, divide it into four portions. Roll out each portion on a floured surface to about 1/16 inch thick.

  2. 6

    Filling the Ravioli

Place teaspoons of the cheese mixture about 1 inch apart on half of the rolled-out dough. Moisten the edges with water, then fold the other half of the dough over the filling. Press down to seal and cut out the ravioli with a knife or a ravioli cutter.

  3. 7

    Cooking Ravioli

Bring a large pot of salted water to a boil. Add the ravioli and cook for 3-4 minutes or until they float to the surface. Remove with a slotted spoon and set aside.

Serving

  1. 8

    Combining with Sauce

Serve the cooked ravioli topped with the warm pomodoro sauce. Garnish with additional basil and grated parmesan if desired.
