Activate Yeast
In a small bowl, combine warm water (110°F/43°C) with the sugar and active dry yeast. Stir gently and let it sit for about 5-10 minutes until frothy.

Mix Ingredients
In a large mixing bowl, combine the flour and salt. Create a well in the center and add the activated yeast mixture and olive oil.

Knead Dough
Mix the ingredients until a rough dough forms. Transfer to a floured surface and knead for about 8-10 minutes until the dough is smooth and elastic.

First Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours or until doubled in size.

Preheat Oven
Preheat your brick oven to around 700°F (370°C). Ensure that it reaches the desired temperature for at least 30 minutes.

Shape Dough
Once the dough has risen, punch it down and divide it into two equal portions. Roll or stretch each portion into a 12-inch circle on a floured surface.

Add Sauce and Toppings
Spread 1/2 cup of pizza sauce evenly over each dough base, leaving a small border for the crust. Sprinkle 1 cup of shredded mozzarella cheese on top of the sauce.

Add Additional Toppings
Add your choice of toppings such as pepperoni, bell peppers, or mushrooms. Finish with fresh basil leaves and a drizzle of olive oil.

Bake Pizza
Carefully place the pizza in the preheated brick oven using a pizza peel. Bake for about 8-12 minutes, or until the crust is golden and the cheese is bubbly.
