    Prepare the Prime Rib

    Preheat your oven to 500°F (260°C). In a bowl, combine the kosher salt, black pepper, garlic powder, and chopped fresh rosemary. Rub the mixture all over the prime rib roast, then drizzle with olive oil and rub it in evenly.

    Roast the Prime Rib

    Place the prime rib on a roasting rack in a pan and roast for 20 minutes. After 20 minutes, lower the oven temperature to 325°F (160°C) and continue roasting for about 1.5 to 2 hours, or until a meat thermometer inserted into the thickest part reads 130°F (54°C) for medium-rare.

    Rest the Meat

    Remove the roast from the oven and tent with foil. Allow it to rest for at least 20-30 minutes before carving.

    Prepare Au Jus

    While the meat is resting, pour the drippings from the roasting pan into a saucepan and skim off excess fat. Add beef broth to the pan and bring to a simmer, scraping the bottom to deglaze. Simmer for 10-15 minutes to reduce slightly.

    Slice the prime rib and serve with au jus on the side.
