Prepare the Brussels Sprouts
Preheat the oven to 400°F (200°C). Trim the ends of the Brussels sprouts and cut them in half.

Cook the Bacon
In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon and drain on paper towels. Reserve the bacon fat in the skillet.

Combine Ingredients
In a large bowl, combine Brussels sprouts, cooked bacon (chopped), sautéed onions, candied jalapeños, olive oil, salt, and pepper. Toss well to coat.

Roast the Brussels Sprouts
Spread the mixture evenly on a baking sheet and roast in the preheated oven for 20-25 minutes or until crispy and golden brown, tossing halfway through.

Finish with Parmesan
Remove from the oven and drizzle with sherry vinegar. Top with freshly grated Parmesan cheese before serving.
