    Prepare Ingredients

    Chop the onion, slice the mushrooms, and wash the spinach. Cut the avocado in half, remove the pit, and scoop out the flesh, slicing it for serving.

    Cook Turkey Sausage

    In a skillet over medium heat, cook the turkey sausage links until browned and cooked through. Remove from the skillet and slice into small pieces.

    Sauté Vegetables

    In the same skillet, add the chopped onion and sliced mushrooms. Sauté for about 3-4 minutes until softened. Add the spinach and cook until wilted, about 1-2 minutes.

    Prepare Egg Mixture

    In a bowl, beat the eggs with salt and black pepper until well combined.

    Cook Omelet

    Pour the egg mixture into the skillet with the sautéed vegetables. Cook over medium-low heat for about 3-4 minutes until the edges start to set. Sprinkle the lowfat cheddar cheese and turkey sausage pieces over one half of the omelet.

    Finish and Serve

    Using a spatula, gently fold the omelet in half over the filling and cook for another minute until the cheese is melted and the eggs are fully cooked. Serve with sliced avocado on the side.

    Prepare Potatoes

    Peel and grate the potatoes. Rinse the grated potatoes under cold water to remove excess starch, then drain well.

    In a separate skillet, heat olive oil over medium-high heat. Add the grated potatoes, season with salt and black pepper, and press down into an even layer. Cook for about 5-7 minutes on one side until golden brown, then flip and cook for another 5-7 minutes until crispy and browned.
