Thin sliced corned beef, sauerkraut, Swiss cheese and 1000 island dressing on garlic grilled rye

Prepare the Garlic Butter
In a small bowl, mix the softened butter with minced garlic until well combined. Set aside.
Assemble the Sandwich

Layer the Ingredients
On two slices of rye bread, spread 1/2 tablespoon of the garlic butter on one side of each slice. Place 4 oz of the thinly sliced corned beef evenly over one slice of bread.

Add Sauerkraut and Cheese
Spread the drained sauerkraut over the corned beef, and then top with 2 slices of Swiss cheese.

Add Dressing
Spread 1 tablespoon of 1000 Island dressing over the other slice of rye bread (the non-buttered side).

Complete the Sandwich
Place the slice with the dressing on top of the cheese, dressing side down, to complete the sandwich.
Grill the Sandwich

Grill Until Golden Brown
Preheat a skillet or griddle over medium heat. Place the assembled sandwich in the skillet and grill for about 4-5 minutes on one side until golden brown. Carefully flip the sandwich and grill the other side for an additional 4-5 minutes, until the cheese melts and the bread is crispy.

Slice and Serve
Once grilled, remove the sandwich from the skillet, slice it in half diagonally, and serve hot with extra 1000 Island dressing on the side if desired.
