Method

Preparation

  1. 1

    Prepare the Potatoes

Wash the russet potatoes thoroughly and peel them. Grate the potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.

  2. 2

    Chop the Vegetables

Finely chop the onion and bell pepper. If using leftover ham, dice it into small pieces.

  3. 3

    Prepare the Cheese

Shred or cube the cheddar cheese, or your choice of cheese.

Cooking

  1. 4

    Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper and sauté for about 3-4 minutes until they are softened.

  2. 5

    Add Ham

Stir in the diced ham and cook for an additional 2 minutes, allowing the flavors to combine.

  3. 6

    Cook the Potatoes

Add the grated potatoes to the skillet, spreading them out evenly. Season with salt and black pepper. Cook for about 5-7 minutes without stirring, allowing the potatoes to develop a crispy layer on the bottom.

  4. 7

    Flip and Finish Cooking

Once the bottom is golden brown, flip the potatoes in sections using a spatula. Cook the other side for another 5-7 minutes until it is crispy and golden.

  5. 8

    Add Cheese

Sprinkle the shredded cheddar cheese over the top of the potatoes. Cover the skillet with a lid and let it cook for an additional 2-3 minutes until the cheese is melted.

Serving

  1. 9

    Serve the O'Brien Potatoes

Remove from heat and serve hot, garnished with fresh herbs if desired.
