O'brien Potatoes Recipe

Prepare the Potatoes
Wash the russet potatoes thoroughly and peel them. Grate the potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.

Chop the Vegetables
Finely chop the onion and bell pepper. If using leftover ham, dice it into small pieces.

Prepare the Cheese
Shred or cube the cheddar cheese, or your choice of cheese.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper and sauté for about 3-4 minutes until they are softened.

Add Ham
Stir in the diced ham and cook for an additional 2 minutes, allowing the flavors to combine.

Flip and Finish Cooking
Once the bottom is golden brown, flip the potatoes in sections using a spatula. Cook the other side for another 5-7 minutes until it is crispy and golden.

Remove from heat and serve hot, garnished with fresh herbs if desired.
