Omelet Preparation

    Cook the Meats

    In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels. In the same skillet, add ham and sausage, cooking until browned. Set aside.

    Sauté the Vegetables

    In the same skillet, add a little olive oil if needed, and sauté the diced onion and bell peppers until softened, about 3-4 minutes.

    Prepare the Eggs

    In a mixing bowl, whisk together the eggs, salt, and pepper until well combined.

    Combine Ingredients

    Add the cooked meats and sautéed vegetables into the egg mixture, stirring to combine.

    Cook the Omelet

    In the skillet, heat olive oil over medium-low heat. Pour the egg mixture into the skillet and cook without stirring until the eggs are mostly set. Sprinkle cheddar cheese on top.

    Finish Cooking

    Cover with a lid to help the cheese melt and allow the omelet to cook for an additional 1-2 minutes.

    Fold the omelet in half and serve immediately.

    Prepare the Potatoes

    Peel and grate the potatoes. Rinse under cold water to remove excess starch and pat dry with a paper towel.

    Cook the Hashbrowns

    In a skillet over medium heat, heat olive oil. Add the grated potatoes, and season with salt and pepper. Cook for 5-7 minutes on each side until golden brown and crispy.

    Remove from skillet and drain on paper towels. Serve alongside the omelet.

    Toast the bread slices in a toaster or on a skillet until golden brown. Serve warm with butter or jam if desired.
