Mix Dry Ingredients
In a large mixing bowl, combine the buckwheat flour, baking powder, salt, and sugar. Whisk together until well mixed.

Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Do not overmix; a few lumps are okay.

Preheat Pan
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.

Pour about 1/2 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 3-4 minutes. Flip and cook for an additional 2-3 minutes until golden brown.
