Cooking the Burrito Filling

Prepare the Sausage
Remove the sausage link from its casing and crumble it into a skillet over medium heat. Cook until browned and fully cooked, about 5-7 minutes. Drain any excess grease.

Cook the Hashbrowns
In the same skillet, add the hashbrowns and cook according to package instructions until crispy and golden brown, about 5-10 minutes.

Add Cheese
Sprinkle the cheddar cheese over the egg mixture and stir until melted and well combined. Remove from heat.
Preparing the Green Chili Sauce

Combine Ingredients
Add the green chilies, chicken broth, salt, and pepper to the saucepan. Bring to a boil, then reduce heat and simmer for 10 minutes.

Blend Sauce
Using an immersion blender (or transferring to a regular blender), blend the sauce until smooth. Return to heat to keep warm.
Assembling the Burritos

Warm Tortillas
In a dry skillet or in the microwave, warm the flour tortillas until pliable.

Fill Tortillas
Place a portion of the filling in the center of each tortilla. Fold in the sides and roll tightly to form a burrito.

Serve
Place the burritos on a plate and smother with the homemade green chili sauce. Serve immediately.
