Worcestershire Butter

    Prepare the Worcestershire Butter

    In a medium bowl, combine softened unsalted butter, Worcestershire sauce, minced garlic, chopped parsley, and black pepper. Mix until well combined.

    Chill the Butter

    Transfer the mixture onto a piece of plastic wrap, shape it into a log, and wrap tightly. Refrigerate until firm, about 30 minutes.

Mashed Red Potatoes

    Cook the Potatoes

    Peel and cut the red potatoes into quarters. Place them in a large pot, cover with cold water, and add salt. Bring to a boil over high heat and cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter and heavy cream. Mash until smooth and creamy. Season with salt and black pepper to taste.

Seasonal Vegetable

    Prepare the Vegetables

    Wash and trim the seasonal vegetables. Preheat a skillet over medium-high heat and add olive oil.

    Sauté the Vegetables

    Add the vegetables to the skillet, season with salt and black pepper, and sauté until tender and lightly browned, about 5-7 minutes.

    Season the Filets

    Pat the center cut filets dry with a paper towel. Season both sides with salt and black pepper.

    Cook the Filets

    Heat olive oil in a skillet over high heat. Once hot, add the filets and sear for 4-5 minutes per side for medium-rare, or until desired doneness is reached.

    Rest and Serve

    Remove the filets from the skillet and let them rest for 5 minutes. Serve with a slice of Worcestershire butter on top, alongside mashed red potatoes and sautéed seasonal vegetables.
