Filet Mignon

Prepare the Filet

Bring the filet to room temperature for 30 minutes before cooking.

Season the Filet

Rub olive oil over the filets and season generously with salt, black pepper, and fresh rosemary.

Cook the Filet

Preheat a skillet over medium-high heat and cook filets for 4-5 minutes on each side for medium-rare. Remove from heat and let rest for 5 minutes.

Rotisserie Chicken

Prepare the Chicken

Remove the rotisserie chicken from packaging and place it on a cutting board.

Season the Chicken

Sprinkle garlic powder and paprika over the chicken for added flavor.

Serve the Chicken

Carve the chicken into pieces and serve alongside the filet.

Mashed Red Potatoes

Boil the Potatoes

Wash and cut red potatoes into quarters. Place in a pot, cover with water, add salt, and boil until tender (about 15-20 minutes).

Mash the Potatoes

Drain the potatoes and return them to the pot. Add butter and milk, then mash until smooth and creamy. Season with salt and pepper.

Cook the Carrots

In a saucepan, add baby carrots and cover with water. Bring to a boil and cook until tender (about 10 minutes).

Drain the carrots and return them to the saucepan. Add brown sugar, butter, and salt. Stir over low heat until the sugar is dissolved and the carrots are glazed.
