Creole Butter

Mashed Red Potatoes

Seasonal Vegetable

KC Strip Steak

Method

Creole Butter

  1. 1

    Prepare Creole Butter

In a small saucepan over low heat, melt the unsalted butter. Once melted, add minced garlic, paprika, cayenne pepper, thyme, oregano, salt, and black pepper. Stir to combine and let it simmer for about 5 minutes. Remove from heat and stir in lemon juice. Set aside.

Mashed Red Potatoes

  1. 2

    Cook Potatoes

In a large pot, add the red potatoes and cover them with water. Bring to a boil and cook for about 15-20 minutes or until tender. Drain and return to the pot.

  2. 3

    Mash Potatoes

Add unsalted butter, heavy cream, salt, and black pepper to the pot with potatoes. Use a potato masher or a fork to mash until smooth and creamy. Keep warm until ready to serve.

Seasonal Vegetable

  1. 4

    Prepare Asparagus

Preheat the oven to 400°F (200°C). On a baking sheet, toss the trimmed asparagus with olive oil, salt, and black pepper. Spread them out in a single layer.

  2. 5

    Roast Asparagus

Roast the asparagus in the preheated oven for about 15 minutes, or until tender and lightly browned. Remove from the oven and set aside.

KC Strip Steak

  1. 6

    Prepare Steak

Season both sides of the KC strip steak with salt and black pepper. Heat olive oil in a cast-iron skillet over medium-high heat until shimmering.

  2. 7

    Cook Steak

Add the seasoned steak to the skillet and sear for about 4-5 minutes on each side for medium-rare, or until cooked to your desired doneness. Remove from heat and let it rest for 5 minutes before slicing.
