Directions for Preparing Hardwood Grilled Grouper

    Prepare the Grouper

    Preheat your hardwood grill to a medium-high heat. Pat the grouper fillets dry with paper towels and brush each side with olive oil. Season both sides with salt and black pepper.

    Grill the Grouper

    Place the seasoned grouper fillets on the preheated grill. Grill for about 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork. Remove from the grill and set aside.

    Make the Beurre Blanc

    In a saucepan over medium heat, combine the white wine and reduce it by half. Lower the heat and slowly whisk in the unsalted butter until the sauce is thick and creamy. Season with salt to taste. Keep warm.

    Roast the Poblano and Tomatoes

    While the grouper is grilling, roast the poblano peppers and Roma tomatoes on the grill until charred on all sides. Remove from the grill, let cool, and then peel the skins off the peppers. Chop the poblano peppers and tomatoes into small pieces.

    Prepare the Salsa

    In a bowl, combine the chopped poblano peppers and Roma tomatoes. Add fresh cilantro and mix well. Season with salt to taste. Set aside.

    Sear the Peppers

    Slice the red and yellow bell peppers into strips. In a skillet over medium heat, add a little olive oil and sauté the bell pepper strips until they are tender and slightly caramelized. Add crumbled chevre cheese to the skillet and toss gently until melted.

    Serve

    On a plate, place a grilled grouper fillet and drizzle with white wine beurre blanc. Top with the roasted poblano and tomato salsa, and serve the sautéed bell peppers with chevre on the side.
