Method

Roasted Chicken

    Prepare the Chicken

    Preheat your oven to 375°F (190°C). Rinse the whole chicken under cold water and pat it dry with paper towels.

    Season the Chicken

    Rub the chicken with olive oil, then season it generously with garlic powder, paprika, salt, black pepper, and fresh rosemary.

    Roast the Chicken

    Place the chicken breast-side up in a roasting pan. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Let it rest for 10-15 minutes before carving.

Center Cut Filet

    Prepare the Filets

    Take the center cut filet mignon out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking.

    Sear the Filets

    Heat a skillet over medium-high heat. Add butter to the skillet. Season the filets with salt, black pepper, and fresh thyme. Once the butter is melted and sizzling, add the filets to the skillet.

    Cook the Filets

    Sear the filets for about 4-5 minutes on each side for medium-rare, or until they reach the desired doneness. Let them rest for a few minutes before serving.

Mashed Red Potatoes

    Prepare the Potatoes

    Wash and peel the red potatoes. Cut them into quarters and place them in a large pot.

    Boil the Potatoes

    Cover the potatoes with water and add a pinch of salt. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

Sweet Glazed Carrots

    Prepare the Carrots

    Wash and peel the carrots, then cut them into bite-sized pieces.

    Cook the Carrots

    In a saucepan, melt butter over medium heat. Add the carrots, brown sugar, salt, and black pepper. Stir to coat the carrots.

    Glaze the Carrots

    Cover the saucepan and cook for about 10-15 minutes, stirring occasionally, until the carrots are tender and glazed.
