Cook the Pasta
In a large pot of boiling salted water, cook the fresh pasta according to package instructions until al dente. Drain and set aside, reserving some pasta water.

Sauté the Aromatics
In a large skillet over medium heat, add the olive oil and 2 tablespoons of butter. Once melted, add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and diced tomato, and cook for an additional 3-4 minutes until the tomatoes soften.

Cook the Shrimp
Add the Gulf shrimp to the skillet, seasoning with salt and black pepper. Cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque.

Add Lemon and Basil
Stir in the lemon juice and chopped fresh basil. Mix well to combine all the flavors.

Combine with Pasta
Add the cooked pasta to the skillet, tossing to combine. If the mixture seems dry, add a splash of reserved pasta water. Stir in the remaining butter and half of the grated Parmesan cheese.

Serve
Serve the Gulf shrimp scampi hot, topped with the remaining Parmesan cheese and additional fresh basil if desired.
