Jalapeño Pimento Cheese

    Prepare the Cheese Mixture

    In a medium bowl, combine the cream cheese, sharp cheddar cheese, pimentos, and diced jalapeños. Mix well until all ingredients are thoroughly combined.

    Season the Mixture

    Add garlic powder, onion powder, salt, black pepper, and hot sauce to the cheese mixture. Stir until well incorporated. Adjust seasoning to taste.

    Chill

    Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Guacamole

    Mash the Avocados

    Cut the ripe avocados in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork to your desired consistency.

    Mix in Ingredients

    Add lime juice, diced tomato, chopped red onion, cilantro, minced garlic, salt, and black pepper to the mashed avocado. Stir until well combined.

    Taste and Adjust

    Taste the guacamole and adjust the seasoning as necessary. Add more lime juice or salt if desired.

Hand-Cut Tortilla Chips

    Prepare the Tortillas

    Stack the corn tortillas and cut them into triangles or strips.

    Heat the Oil

    In a large pot or deep skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chips

    Carefully add a handful of tortilla pieces to the hot oil. Fry until golden brown and crispy, about 2-3 minutes, turning occasionally.

    Drain and Season

    Remove the chips from the oil using a slotted spoon and place them on a paper towel-lined plate to drain. While still warm, sprinkle with salt to taste.
