Calamari

Method

Calamari Preparation

  1. 1

    Prepare the Calamari

In a medium bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. Mix well.

  2. 2

    Coat the Calamari

Take the cleaned calamari rings and dip them into the flour mixture, ensuring they are well-coated.

  3. 3

    Heat the Oil

In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

  4. 4

    Fry the Calamari

Fry the coated calamari rings in batches for 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Garlic Aioli Preparation

  1. 5

    Combine the Ingredients

In a small bowl, mix together the mayonnaise, minced garlic, lemon juice, salt, and black pepper until smooth.

  2. 6

    Chill

Cover the aioli and refrigerate for at least 30 minutes to let the flavors meld.

Roasted Tomato Salsa Preparation

  1. 7

    Roast the Tomatoes

Preheat your oven to 200°C (400°F). Place the halved Roma tomatoes on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Roast for 20-25 minutes until caramelized.

  2. 8

    Combine the Salsa Ingredients

In a medium bowl, combine the roasted tomatoes, chopped red onion, fresh cilantro, lime juice, salt, and black pepper. Mix well.
