    Prepare the Pork

    Season the pork tenderloin with salt and black pepper. Heat 1 tablespoon of olive oil in a grill pan over medium-high heat. Sear the pork on all sides until browned, about 3-4 minutes per side. Cook until the internal temperature reaches 145°F. Remove from heat and let rest for 5 minutes before slicing into medallions.

    Grill the Vegetables

    While the pork is resting, slice the onion and bell pepper into strips. In the same grill pan, add the remaining tablespoon of olive oil and sauté the onions and peppers until they are soft and slightly charred, about 5-7 minutes.

    Assemble the Sandwich

    Toast the brioche hoagie rolls until golden. Spread aioli on both sides of the rolls. Layer the grilled pork medallions, grilled onions, and peppers. Top with pepper jack cheese. Drizzle Cuban BBQ sauce over the top and close the sandwich.

    Serve

    Cut the sandwich in half and serve immediately with your choice of side.
