Directions

  1. 1

    Prepare the Ingredients

Wash and dry the Roma tomatoes, jalapeño peppers, and cilantro. Peel the onion and garlic cloves.

  2. 2

    Smoke the Vegetables

Preheat your smoker to 225°F (107°C). Cut the tomatoes in half and place them, along with the whole jalapeños, onion, and garlic, on the smoker rack. Smoke for about 1 hour, or until the vegetables are tender and have a smoky flavor.

  3. 3

    Blend the Salsa

Remove the smoked vegetables from the smoker and allow them to cool slightly. In a blender or food processor, combine the smoked tomatoes, jalapeños (remove seeds for less heat if desired), onion, garlic, smoked paprika, cilantro, lime juice, salt, and black pepper. Pulse until you reach your desired salsa consistency.

  4. 4

    Taste and Adjust

Taste the salsa and adjust seasoning with more salt, pepper, or lime juice as needed.

  5. 5

    Serve

Transfer the salsa to a serving bowl and enjoy with tortilla chips, tacos, or as a topping for your favorite dishes.
